Nothing says autumn like homemade cinnamon rolls. Well except spiced apple buns, gingerbread, blackberry tarts, apple pies … you get the point. Anyway, I love cinnamon rolls. When September rolls in every year, I make sure to bake cinnamon rolls at least once (if not twice or three times) to make the most of autumn (which everyone knows is the best season for baked treats!).

Cinnamon roll dough:
- 175g Full Fat Milk
- 1 Package of Active Yeast (7g)
- 50g Caster Sugar
- 1 Medium Egg
- 1 Egg Yolk
- 375g Bread Flour
- 55g Unsalted Butter
- A Dash of Salt
Cinnamon roll filling:
- 120g Soft Brown Sugar
- 2 tbsp Ground Cinnamon
- 55g Unsalted Butter
Cinnamon roll cream cheese icing:
- 120g Cream Cheese
- 3 tbsp Unsalted Butter
- 1/2 tsp Vanilla Extract

How To Make Cinnamon Rolls:
Time needed: 2 hours.
Big, soft cinnamon rolls to warm your spirit and fill your belly on any wintery day! These easy, homemade cinnamon rolls are the perfect brunch or afternoon snack to enjoy on a cold day with a warm cup of tea.
- Gently warm the milk
In a small saucepan warm the milk over medium heat. The milk should not boil, it should just be gently heated until it is around 43 degrees celsius.
- Add the yeast to the milk
Pour the warmed milk into a mixing bowl and sprinkle the active yeast on top. If it’s activated, the yeast should foam after a few minutes. If it doesn’t foam, you’ll need to restart again as the yeast hasn’t been activated.
- Add in the sugar, egg, egg yolk and melted butter
Melt the butter in a saucepan, then add the butter along with the sugar, egg and egg yolk to the milk and yeast mixture. Mix well until all the ingredients are well combined.
- Stir in the bread flour
Sift the bread flour then add to the mixing bowl. Slowing fold in the bread flour until the mixture has formed into a dough.
- Knead the dough
On a well-floured surface, knead the dough for 10 minutes using your hands. If you have an electric mixer, place dough hook on the mixer and knead the dough on medium speed for 8 -10 minutes.
- Leave the dough to rise
Move the dough to a well-oiled bowl, cover with cling film and place in the fridge overnight. The next day, take the dough out of the fridge 30 minutes before you plan to start the next step to bring it to room temperature.
- Roll out the dough
Take the dough out of the bowl and place onto a well-floured surface. Using a floured rolling pin, roll the dough to a rectangle around 35x23cm. Keep sprinkling flour and turning over the dough to prevent it from sticking to the worktop.
- Cover with butter
In another bowl, soften the butter until its spreadable. Then spread the softened butter onto the dough, leaving half a 1cm gap at one of the short sides of the rectangle.
- Sprinkle the cinnamon and brown sugar on top.
In another bowl, mix together the brown sugar and cinnamon. Sprinkle the cinnamon sugar mix on top of the dough, then gently pat in using your hands.
- Roll the dough
Starting from the long side of the rectangle, roll up the dough to form an even roll. Tuck in the ends to seal the dough as best you can.
- Cut into rolls
Using a sharp knife or unflavoured floss, cut the dough into sections 2 cm wide. Greece a baking tray and line with baking paper. Place the cinnamon rolls into the baking tray, cover with cling film and a warmed towel. Leave the rolls to rise for 30 minutes. In the meantime, preheat the oven 180 degrees celsius.
- Place the cinnamon rolls in the oven.
Once risen, remove the towel and cling film and place the cinnamon rolls in the oven for 20-25 minutes. They should be golden-brown at the edges but not overburnt, so watch that they do not stay in the oven longer than needs be.
- Make the cream cheese icing
In another bowl, cream the butter then add in the cream cheese and vanilla extract. Sift in the icing sugar, then gently mix to combine until the icing is fluffy and smooth.
- Ice the cinnamon rolls
Once the cinnamon rolls are cooked, leave to cool for 5-10 minutes. Once cool, generously spread the cream cheese icing on top. Then enjoy!
